Salad Recipes

No doubt it is hot, hot, hot here in Australia right now, 41 degrees here in Melbourne today (106 fahrenheit) and it's only the beginning of the expected summer heatwave. So it's the perfect time to be eating some fresh salads and sticking to those healthy New Year's resolutions. I have never been hugely into salads... limp lettuce, cucumber, tomato... but now that there are so many delicious recipes out there  I really want to get more creative with my salads this summer.

I have bookmarked the following mouth-watering recipes from Taste to try over summer:

Avocado, spinach and walnut salad

Mango, avocado and macadamia salad

Asian-style chopped salad

Roasted beetroot and baby spinach salad with walnut dressing

Eggplant and lentil salad with yoghurt dressing

Avocado and corn salad

Apple coleslaw

Lamb, mango and pecan salad

Chargrilled pear and walnut salad

Spicy eggplant and chickpea salad with paprika yoghurt

Chicken and barley salad with avocado and grapefruit

Quinoa salad with asparagus and feta

Yum! I made the last recipe for a New Year's BBQ at my brother's place and everyone went back for seconds-- which is amazing because my family normally prefer to go back for seconds of the meat, not the salad! So who says you don't make friends with salad? I think they all look delicious and I can't wait to try them. Please let me know if you have any great salad recipes to share, I love finding new favourites.

Now I am certainly not a healthy eating salad saint (shock) I also found a pretty amazing Salted Butter Caramel Ice Cream recipe that is making me drool just thinking about it!

  2. I love spinach, strawberry,and kiwi salad with toasted pecans and poppyseed dressing. I like the creamy poppyseed, but I am sure you could substitute something healthier. I am definitely trying some of the salads you have posted above once the weather warms up.

  3. I have Quinoa on my list of foods to attempt to cook this year!!! Now I have a recipe!!!! I've stolen a couscous one of my Aunt which everyone loves - I'll blog it for you next week :0)

    It's definitely the weather for ice-cream!!!!!! LOL & salad :0)

  4. I find salads so hard to get down my band. Beetroot and lettuce gets tuck so easily (unless it's drowned in dressing). I might try some of these I reckon!
